I’d say this type of round pie with a golden crust is not close to traditional here. But we always see them in the movies or online and long for them. For some reason, every man I know is a fan of apple pie and not afraid to require it once in a while, so last week I finally tried one, of the Swedish variety (äppelkaka). All the signs were showing failure, the dough didn’t look right (of course, I had no idea what right was in this case), there was too little or too much apple at certain points, and I could’ve sworn it looked burnt in the oven. But when I took it out: perfection! On that night, I was already planning new fillings. Soon, I found raspberries in the frozen fruit aisle and made another delicious pie. Oh, there will be more! Peaches? Apricots? Sour cherries? I can’t even…

Raspberry pie
Super easy pie to make with fresh or frozen raspberries.

Ingredients
  1. 1 1/2 cup flour
  2. 3 tsp baking powder
  3. 1/2 cup brown sugar
  4. 1/2 cup butter (cold)
  5. 1 egg, beaten
  6. a few tsp water (cold)
  7. 1 1/2 cup raspberries (fresh or frozen)
  8. almond milk
  9. almond essence
Instructions
  1. Mix the flour, baking powder and sugar in a bowl. Cut the butter in small cubes and add it to the bowl, mixing with a fork. Preheat the oven at 190 degrees Celsius.
  2. When the composition is crumbled, add in the egg. If the dough is too dry, add a few teaspoons of cold water and mix it with your hands.
  3. Divide the dough in two equal parts. Roll the first one and set it in a round, lined tray. Put the raspberries on top, add sugar if you want. Roll the second piece of dough and set it over the raspberries. Press the sides of the dough together, and make a few cuts in the crust. Take it to the oven.
  4. Make a mixture from a few teaspoons of almond milk and a drop of almond essence. When the pie is almost done (after about 25 minutes), brush the top of the pie with this mixture, then set back to the oven, reducing the temperature.

    Este excelenta. E buna si foarte usor de facut. Am facut-o de trei ori pana acum si de fiecare data am terminat-o in cea mai mare viteza. Tocmai am scos una acum de la cuptor, iar baietelul meu nici n-a mai avut rabdare sa se raceasca si spune ca este “extrem de buna” si vrea sa-ti multumim pentru reteta. Asa ca, multumim.
