When I first visited the UK in 2013, it was a trip of many firsts. There were all these shops I had never seen in real life, the famous Cadburry Easter eggs, the Dr. Pepper flavored lip smacker I’d heard so much about. But one thing that really stuck with me was the scone. You could get it with tea and butter almost anywhere, in the fruity or cheesy variety. It was the latter that got me most interested, and I tried a recipe soon after I returned home. Did it work? Obviously not. But nevertheless, she persisted. And guess what? These scones are almost as tasty as they are in their homeland.

Easy and tasty cheese scones to serve with butter and tea.

Ingredients
  1. 100g melted butter
  2. 5 tbsp olive oil
  3. 1 cup Greek yogurt
  4. 2 eggs
  5. 3 cups flour
  6. 2 1/2 tsp baking powder
  7. 1/4 tsp bicarbonate powder
  8. 1 cup shredded salty cheese
  9. salt & pepper
Instructions
  1. Preheat the oven at 200°C.
  2. In a bowl, mix together the butter, oil, yogurt and eggs.
  3. In a separate bowl, mix the flour, baking powder, bicarbonate, cheese, salt and pepper.
  4. Pour the wet ingredients over the dry ingredients and mix to form a dough.
  5. Roll out the dough about 1 cm thick and cut hearts or circles with a cookie cutter. Top with more shredded cheese and/or herbs.
  6. Bake on a lined tray, for about 20-25 minutes.
Notes
  1. You can use a mix of cheese for best results (Parmesan, cheddar etc.)
  2. Top the scones with dried oregano.
