My passion for cooking started with a cute little pancake, no surprise, right? I like flavors, so I always add something different in my pancakes, but there has to be a pinch of cinnamon in the batter, always. The recipe is below, hope you’ll try it!
Fluffy and delicious pancakes
- 1 cup plain flour
- 1 cup milk (choose a fat one)
- 1 medium egg
- 2-3 tablespoons sugar (you can also use brown sugar, I also use coconut sugar)
- 1 teaspoon baking powder
- 2-3 drops vanilla essence or one vanilla pod, I use sometimes orange essence or orange zest, it adds an amazing flavor
- 1/2 teaspoon of cinnamon or more if you’re into it, I just love the flavor
If you gathered all the ingredients together, now it’s quite simple. Put all the wet ingredients in a bowl (milk, vanilla essence, the egg) and beat them slowly, but not too long. There is no need to over mix them, you should use an egg whisk rather than a mixer.
Then all you have to do is add the dry ingredients: flour, baking powder, sugar, and cinnamon, and mix them slowly until well combined. Sometimes I add another tablespoon or two of flour, the batter has to be quite thick.
Now comes the really hard part, you have to wait around 15-20 minutes before making the actual pancakes. Allow the batter to rest so that the flavors blend well.
Then you will need a reliable pan, a non-stick one, brush it with a bit of cooking oil (e.g. sunflower oil). When the pan is hot and ready, pour around 2 tablespoons of the batter for each pancake. Let them bubble (they form those little bubbles when they start cooking) and then flip them on the other side, baking until they turn golden brown.
Once you’re done with all the batter you can enjoy the pancakes with all types of toppings! I love them with honey, walnuts and pomegranate seeds or with Nutella and raspberries. Yum!
