One thing that doesn’t go unnoticed when spring hits Germany is asparagus. I’ve never tried it before moving here, so I was excited to experiment with it. This tart is a total hit! Asparagus looks very pretty on stuff (especially in color contrast with the beets!), it’s tasty, and I feel like it’s probably healthy, too. And then there’s the combination of melted, baked cheeses – mozzarella and parmesan – which should probably be on every savory baked good. I wanted to put these toppings on store-bought puff pastry to make things easier for myself but I’m so glad I didn’t! I adapted the crust from my fruit pie and it’s delicious in this combination! So if you have an extra 10 minutes, do that. And then, enjoy on Easter or on Sunday mornings or when you have your first picnic for the year.

Ingredients
  1. 2 cups flour
  2. 1 tsp baking powder
  3. 1/2 cup cold butter, cubed
  4. pinch of salt
  5. 1 egg, beaten
  6. 125 g fresh mozzarella cheese
  7. 1/2 cup parmesan shavings
  8. 400 g green asparagus
  9. 1 small beet
Instructions
  1. In a bowl, mix the flour with the baking soda and salt. Add the cubed butter and smash it with a fork. Add the egg and continue to mix, moving from fork to hand to form a dough. Place in the fridge.
  2. Preheat the oven at 200 degrees Celsius and line a rectangular tray. I used one that's 30 x 21 cm.
  3. Cut the mozzarella in cubes and shave the parmesan. Wash the asparagus and cut longitudinally if it's thick. Peel the beet and slice it thinly.
  4. Remove the dough from the fridge and roll it on a well-floured surface. Transfer it to tray, covering the entire bottom and cutting off excess sides.
  5. Place the mozzarella all over the dough, then continue with the parmesan cheese. Next, cover in asparagus pieces and top with beet slices.
  6. Bake for 30 minutes at 200 degrees celsius and serve warm or cold.
Notes
  1. If you don't feel like rolling dough, you can also use store-bought puff pastry.
  2. Toss the beet with some oil before baking to make it even tastier.
